Carrot Salad

Serves 1, Low Carb, Vegetarian, GDRx Veggie Week

 

  • 2 Medium carrots
  • Apple cider vinegar (1-2 tsp)
  • Dill (a pinch)

 

Tip: For quicker prep time, purchase shredded carrots at the grocery store instead of shredding them yourself.

 

Rinse carrots with water then dry. Trim and peel carrots then use a grater to shred. Add shredded carrots to a bowl along with 1-2 tsp of olive oil, apple cider vinegar, Celtic Sea salt, and dill. Mix to combine.
