Candied Pecans

  • Raw pecans (3 cups)
  • Monk fruit sweetener (1 1⁄2 cups)
  • Cinnamon (1 TBS)
  • Vanilla extract (1 tsp)

 

Heat a large pan over medium heat. Once hot, add 1 cup monk fruit sweetener, ¼ cup water, and vanilla extract then stir to combine. Once the ingredients are completely melted, add the pecans and stir until evenly coated. Cook, stirring, until the sweetener crystallizes on the pecans. Turn off heat and allow pecans to sit in the pan for 2-3 minutes to cool off. Break up the pecans so they don’t stick together, then toss with ½ cup of monk fruit sweetener and the cinnamon
