Mac and “Cheese”

  • Chickpea pasta (8oz)
  • 3 Potatoes
  • 2 Carrots
  • 2 Sweet potatoes
  • 1 Yellow onion
  • Flavor God “Cheese” seasoning

 

Cook the pasta using the directions on the back of its box. Bring a pot of salted water to a boil. Rinse produce with water, then dry. Peel the potatoes and sweet potatoes, then cut into cubes. Trim and peel the carrots, then finely dice. Cut the ends o! the onion, then finely dice. Boil the veggies until they are tender, 10-15 minutes. Drain boiled veggies, reserving 1 cup of water. Add the boiled veggies, the reserved cooking water, 2 TBS of olive oil, and the “cheese” seasoning in a blender and blend until smooth. Drain cooked pasta and add the sauce.
