Pesto Ingredients:
- ½ cup pepitas
- 1 small garlic clove
- 1 tbsp nutritional yeast
- ¼ tsp sea salt
- Fresh ground black pepper
- 2 packed cups chopped kale
- 2 tbsp lemon juice
- ½ cup extra-virgin olive oil
Directions:
Combine the pepitas and garlic in a food processor until ground completely. Add the nutritional yeast, salt and pepper. Add kale and lemon juice. Add olive oil and keep mixing until smooth.
