- ½ tbsp coconut oil
- 1 head of cauliflower
- Salt and pepper, to taste
- Remove all the greens from the cauliflower and break into florets. Use a food processor to process the cauliflower into rice.
- Transfer into a large, clean towel and squeeze out all of the moisture.
- To cook, add ½ tbsp. coconut oil into a skillet over medium heat. Add cauliflower rice and cook for 5 minutes, stirring occasionally. Season with salt and pepper.
