Avocado Coconut Popsicles

Stay ice cold, hydrated and energized this summer with our delicious avocado coconut popsicles.

Avocados help reduce inflammation, improve gut and immune health and boost mood. Coconut milk helps relieve symptoms of fatigue, maintains blood sugar levels and is hydrating on those hot summer days. So tasty, even your kids will love them!

 

Ingredients

  • 1 Hass Avocado, peeled
  • 1 13.5oz of BPA free can, Organic Coconut Milk, placed in refrigerator overnight
  • 1 Lime, with 1 teaspoon of grated zest and ½ the juice of the lime
  • 1 tablespoon of coconut sugar or more to taste

Directions

 

Mix all ingredients in food processor and pour into molds, depending on the size of the popsicles molds you use, you can make 4 large or 8 smaller popsicles freeze until solid. (Around 6 hours or overnight)

 

If you don’t have popsicle molds, you can pour in ice cube trays and freeze until solid.
