Gear Up for Game Day: Choose Your Winning Healthy Snack

We've selected two delicious and nutritious recipes that are perfect for game day, regardless of the teams playing. Give one or both a try!

First up, we have a delightful game day snack that’s sure to be a hit: Buffalo Cauliflower Wings!  

 

Makes 6 servings. 

 

Ingredients: 

  • Cauliflower florets (4 cups) 
  • Vegan buffalo sauce (1 cup) 
  • Almond milk (unsweetened)(1⁄2 cup) 
  • GF flour (almond, coconut, or cassava)(1⁄2 cup) 
  • Refined coconut oil (1 TBS) 
  • Garlic powder (1 tsp) 
  • Paprika (1 tsp) 

 

Instructions: 

Preheat the oven to 425°F. In a large mixing bowl, add almond milk, 1⁄2 cup of water, GF flour, garlic powder, and paprika. Stir to combine. Dip each cauliflower floret in the batter, then place on a baking pan lined with parchment paper. Bake for 10 minutes. Then flip the florets over and bake for another 10 minutes. Combine buffalo sauce and coconut oil in a bowl and microwave for 10-30 seconds. Dip the cauliflower in the sauce and add back to the pan. Return to the oven and cook for 20 more minutes. Serve with sides of your choice. 

 

Next, we have another great game day option: Black Bean Tacos! 

Makes 2 servings. 

  • 4 Tortillas (grain and gluten free) 
  • Black beans (half of a 15oz can) 
  • 1 Bell pepper 
  • 1 Red onion (small) 
  • Chili powder (1⁄2 tsp) 
  • Cumin (1⁄2 tsp) 
  • Salsa 

 

Instructions:  

Wash produce thoroughly. Remove seeds from the bell pepper, then dice it. Trim the ends off the red onion, then dice it. Halve the lime. Drain and rinse the black beans. Add a drizzle of olive oil to a skillet over medium heat, then cook the onion and bell pepper for 3-4 minutes until softened. Add beans to the skillet along with the chili powder, cumin, 1⁄4 tsp of salt, and 1⁄8 tsp of black pepper. Stir to combine and cook for 2-3 minutes. Warm the tortillas, then assemble tacos with the bean mixture and a dollop of salsa.
