 Ingredients: 

  • 4 cups chopped broccoli florets 
  • 1/2 cup chopped red onion 
  • 1/2 cup dried raisins 
  • 1/4 cup chopped walnuts or cashews  
  • 1/2 cup plain yogurt (dairy alternative recommended) 
  • 2 Tablespoons Olive Oil Mayonnaise  
  • Juice of 1 medium lemon 
  • 1 tablespoon honey or maple syrup (optional) 
  • Salt and pepper to taste 

 

Instructions: 

  1. Prepare the Dressing: In a small bowl, whisk together the yogurt, lemon juice, mayonnaise, optional sweetener, salt, and pepper. Set aside.

  2. Prepare the Salad: In a large bowl, combine the broccoli florets, red onion, raisins, and nuts.

  3. Combine: Pour the dressing over the salad and toss until well coated.

  4. Chill and Serve: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together. This can even sit over night as the broccoli holds very well!
