This veggie-packed versi-fry is a perfect meal to enjoy while on your GDRx detox program. It is quick to make and can easily incorporate whatever fresh vegetables you have on hand. Offering a balance of protein, fiber, carbs and fat you’ll enjoy this delicious bowl and stay full longer. Created by one of our health coaches, this versi-fry is sure to become one of your go-to meals!
Ingredients:
- 1 TBSP avocado oil
- 16oz pack ground turkey or buffalo *can substitute for just about any other type of meat including fish
- 3 TSP garlic
- Salt and pepper to taste
- 1 cup mushrooms sliced
- 1 small yellow onion sliced
- 2 bell peppers sliced
- 4 cups fresh or frozen spinach
- 2 cups broccoli florets steamed (set aside)
- 1 cup quinoa prepared according to package instructions
- Avocado
- Coconut aminos
Directions:
- In a pan over medium heat add oil, garlic and ground turkey. Season with salt, pepper to taste.
- When meat is cooked, add in mushrooms, onion and bell pepper. Sauté until tender.
- Add in spinach and incorporate until a dark green color.
- Assemble bowl with quinoa, top with versi-fry mixture and steamed broccoli.
- Top bowl with sliced avocado and a few slashes of coconut aminos.
