Detox-Friendly Versi-Fry

This veggie-packed versi-fry is a perfect meal to enjoy while on your GDRx detox program. It is quick to make and can easily incorporate whatever fresh vegetables you have on hand. Offering a balance of protein, fiber, carbs and fat you’ll enjoy this delicious bowl and stay full longer. Created by one of our health coaches, this versi-fry is sure to become one of your go-to meals!

 

Ingredients:

  • 1 TBSP avocado oil
  • 16oz pack ground turkey or buffalo *can substitute for just about any other type of meat including fish
  • 3 TSP garlic
  • Salt and pepper to taste
  • 1 cup mushrooms sliced
  • 1 small yellow onion sliced
  • 2 bell peppers sliced
  • 4 cups fresh or frozen spinach
  • 2 cups broccoli florets steamed (set aside)
  • 1 cup quinoa prepared according to package instructions
  • Avocado
  • Coconut aminos

 

Directions:

  1. In a pan over medium heat add oil, garlic and ground turkey. Season with salt, pepper to taste.
  2. When meat is cooked, add in mushrooms, onion and bell pepper. Sauté until tender.
  3. Add in spinach and incorporate until a dark green color.
  4. Assemble bowl with quinoa, top with versi-fry mixture and steamed broccoli.
  5. Top bowl with sliced avocado and a few slashes of coconut aminos.
