Coleslaw Ingredients:
- 1 head cauliflower, cut into florets
- ¼ cup almond or cashew milk
- 3 tbsp olive oil
- 1 ½ tsp rosemary fresh
- 1 ½ tsp thyme
- 3-4 cloves roasted garlic
- ¾-1 tsp salt
- 1 pinch of pepper
Directions:
- Roast a head of garlic in the oven
- Bring large pot of water to a boil, boil cauliflower for 10-12 minutes
- Drain water and place cauliflower on a towel to try
- Combine cauliflower, milk, olive oil, rosemary, thyme, garlic, salt, pepper in the food processor
- Puree for 1-2 minutes or until mashed cauliflower is completely smooth
- Move the puree into a bowl and serve with a drizzle of olive oil, a few sprigs of rosemary and/or thyme
