Gather your ingredients listed below and follow along with Health Coach Beth Kaczmar to make the best pumpkin cookies!
Into a blender add all ingredients:
- 1/2 cup of unsweetened almond milk
- 1/4 of a cup of melted coconut oil
- 3/4 of a cup of pumpkin puree
- 1 and ½ Tbsp of chia seeds
- 1 Tbsp of pumpkin spice
- 1/2 cup of monk fruit sweetener
- ½ cup keto friendly gluten-free flour
Blend until combined. Using a spoon, place dollops on a baking sheet and bake at 375 degrees for about 8 minutes.
