Salad Ingredients:
- 1 lb shredded brussels sprouts
- 4 cups shredded red cabbage
- 1 ½ cup shredded carrots
- 1 red bell pepper, diced
- 1 bunch cilantro, chopped
- ½ cup diced green onion
- ¾ cup salted roasted cashews
- ½ cup toasted sliced almonds
- 2 tbsp toasted sesame oil
- 2 tbsp olive oil
- 2 tbsp coconut aminos
- 2-3 tbsp rice vinegar
- 1 ½ tbsp pure maple syrup
- 2 cloves minced garlic
- 1 tbsp minced ginger
- 1 tbsp tahini or cashew butter (*optional, makes for a creamy dressing)
