Veggie Loaded Salad

Serves 1, Low Carb, Vegetarian, GDRx Veggie Week

  • Romaine & spinach (~3-5oz)
  • 4 Radishes
  • 1 Celery stalk (optional)
  • 1⁄4 Yellow bell pepper
  • 1⁄2 Avocado
  • 1⁄2 Cucumber
  • Black olives (1⁄4 cup)
  • Hemp seeds (2 TBS)
  • Ground flax seeds (1 TBS)
  • Apple cider vinegar (to taste)

 

Rinse produce with water then dry. Cut the ends off the radishes, avocado, and cucumber. Thinly slice radishes and cucumber into rounds. Remove the seed and skin from the avocado, then roughly chop. Roughly chop the celery stalk and yellow bell pepper. Add chopped veggies to a bowl with the rest of the ingredients, then drizzle with olive oil and apple cider vinegar and season with salt and pepper. Toss to combine.
