Homemade Cauliflower Rice

Ingredients:

 

  • ½ tbsp coconut oil
  • 1 head of cauliflower
  • Salt and pepper, to taste

 

Directions:

 

  • Remove all the greens from the cauliflower and break into florets. Use a food processor to process the cauliflower into rice.
  • Transfer into a large, clean towel and squeeze out all of the moisture.
  • To cook, add ½ tbsp. coconut oil into a skillet over medium heat. Add cauliflower rice and cook for 5 minutes, stirring occasionally. Season with salt and pepper.
