Cashew Crunch Shredded Brussels Sprouts Salad

Salad Ingredients:  
  • 1 lb shredded brussels sprouts
  • 4 cups shredded red cabbage
  • 1 ½ cup shredded carrots
  • 1 red bell pepper, diced
  • 1 bunch cilantro, chopped
  • ½ cup diced green onion
  • ¾ cup salted roasted cashews
  • ½ cup toasted sliced almonds
  Dressing Ingredients:  
  • 2 tbsp toasted sesame oil
  • 2 tbsp olive oil
  • 2 tbsp coconut aminos
  • 2-3 tbsp rice vinegar
  • 1 ½ tbsp pure maple syrup
  • 2 cloves minced garlic
  • 1 tbsp minced ginger
  • 1 tbsp tahini or cashew butter (*optional, makes for a creamy dressing)
  Directions: Prep veggies, blend dressing and toss together. To garnish add extra cashews and almonds, green onions and cilantro.
